How can I translate into English:

Bueno, esta es mi prueba:
¡que cumplas muchos más! = many happy returns of the day!
¡que los cumplas muy feliz! = have a very happy birthday!

I wish you many happy returns of the day! (and I hope to witness it!) ?

(I do not think the "y yo que los vea" gets translated into English. It's kind of too Spanish... but maybe some Juan has a better idea.)

Maybe, "and I hope I am with you to celebrate it!" (Given that this is a little bit of a "formula", I am not sure what is the common ethnic think used in England, America or Australia...)

Yes, it depends on how literal a translation you want. It is so formulaic that it's unlikey you want accuracy, and I've never heard the greeting said thus in English.
