I think it's more related to the second, as the saying in Spanish means that someone is sure they can prove what they're stating, even if it's not so obvious for the other person(s). :thinking:

So it's like "...and I can prove it," or "...and the proof is staring us in the face."
By the way, I should have quoted the entire saying as The proof of the pudding is in the eating - sorry!
