Agreed. It's better if you specify how the excursion is performed. The dictionary lists it without the "vehicle."

I personally would tend to use 'ir de excursión' and the context would tell how is the "excursion" is performed.

Yo solía ir de excursión con mi padre a la montaña, cuando era niño... unos 20 o 25 km para un chaval de 8 o 9 años no estaba mal... (walking... una buena caminata)

If hiking means walking in the countryside, from some years ago the word "senderismo" is used here. But, as others said, we can use "ir de excursión" or "ir de paseo", "ir a pasear", "ir a caminar".
"Hacer senderismo" sounds like practising a sport. Some people, including myself, consider that expression ridiculous. We just walk, don't need another word. But we are old-fashioned.
