"She loved it" (a doll)

"la encantaba" o "Le encantaba"

I'm not sure in Spanish if you need to put "la" o "lo" with "encantar" or if "le encanta" means "she loves it"

It's "le encanta" in this context. In Spanish, there are verbs that change of meaning according to if then take a OD or a OI:

"Encantar" with OD: It bewitches her.
"Encantar" with OI: She loves it.
