A sort of backhanded compliment to a teacher would be in English
"He taught me everything he knows, but he didn't teach me everything I know."
Me enseñó todo lo que sabe pero no todo lo que sé.
Sound alright? Better suggestions?

Grammatically, I see nothing wrong with it, but for the sake of the rhythm of the language, I would end the sentence with yo. It will be good to hear from native speakers about this.

if you add that "yo" like this "...todo lo que (yo) sé (yo). Either way, it would be just to be emphatic, no rhythm/metric (measure) involved here.

The original proposal is completely alright for my ears. I wouldn't change anything. :)
