How do I say in English dosificada in the following context. La gramática se enseña dosificada en cada curso.

They systematically build upon the grammar taught in previous courses.
They apportion/mete out grammar over several courses.
Grammar is apportioned/meted out (in each course) over several courses.

Grammar is divided up into manageable chunks and taught in/distributed over several courses.

I like the last option, "manageable chunks" (that can be digested a bite at a time... or a "bit" at a time...)

How about saying, "Grammar is taught on a gradual basis, one step at a time, in each course"?

Would that be acceptable English as well?

Yes, 'a gradual basis, one step at a time' is acceptable.
