It's a Spanish phrase that comes from a Spanish deck of cards. It means a
predictable daily routine. Is this term used in Latin America?

I believe it's used in Mexico, but I never heard it used in Central America.
There's a movie by the same name (1944), made in Mexico, if that's any help.

@Poli: I had to Google it, and nobody around me has ever heard the expression used like that.
I think "sota, caballo y rey" is a collocation, because those three things always go in the same order, but the examples I found as "Mi día es sota, caballo y rey" to talk about daily routine, is completely new to me. I wouldn't even have understood at first if I had been talking to someone using it. :blackeye:
@Rusty: Oh, I have never seen that movie! I'll look for it. :D
