How does one say "Answer the phone" in the different Spanish speaking countries?
Can one use the verb cojer? Atender?
:?:
Thanks!

to answer the phone = contestar el teléfono
to take the phone off the hook = descolgar el teléfono
to pick up the phone (take off the hook) = descolgar el teléfono
to pick up the phone (answer the phone) = contestar el teléfono
I'll get it / I'll answer it = Yo contesto / Yo voy
Pick up! = ¡Contesta!
Edit: Chileno, you're fast. :)

"Atender" is used for a person whose work is waiting for a call, a person working in a telephone switchboard.
-¿Viene Marta a comer?
- A Jorge
If you're only waiting, use "esperar"
-¿Viene Marta a comer?
Saludos :D
