The phrase 'to go hiking' (note the correct form in English) is 'ir de caminata' or 'ir de excursión'. Do you know how to conjugate the verb 'ir' into the first-person, present indicative tense?

Rusty, here in Tenerife the second expression would involve a bus or car. You would need to say ir de excursión a pie so the first is perhaps preferable. :)

Agreed. It's better if you specify how the excursion is performed. The dictionary lists it without the "vehicle."

I personally would tend to use 'ir de excursión' and the context would tell how is the "excursion" is performed.

If hiking means walking in the countryside, from some years ago the word "senderismo" is used here. But, as others said, we can use "ir de excursión" or "ir de paseo", "ir a pasear", "ir a caminar".
"Hacer senderismo" sounds like practising a sport. Some people, including myself, consider that expression ridiculous. We just walk, don't need another word. But we are old-fashioned.
