I want to say "she fell rolling by the stairs" in spanish using the words
cayó & rodando

Is the phrase "ella se cayó rodando por la escalera" correct?

It's correct, but "ella se cayó rodando por las escaleras"
it's curious, but in Spanish "escalera" refers usually to a ladder
and "escaleras" to the house stairs.
Here "la escalera" you're saying she's falling from a ladder

This literally says "Cayó rodando junto a las escaleras".

Ella se cayó rodando por las escaleras = She fell down the stairs / She rolled down the stairs / She tumbled down the stairs.
