Does this translate correctly?

Mientras más = the more
Mientras menos = the less

Mientras más te conozco más me siento feliz que te conocí
[The more I know you the more I feel happy that I met you]

Mientras menos lo sabe, mejor
[The less you know about it the better]

Mientras menos te recuerde y te sienta presente, yo me hago más fuerte
[the less I may remember you and feel you present, I make myself stronger]

Also, Cuanto más/menos = Mientras más/menos right?

The answer to your first question is yes. Those phrases translate as you've written them.
The answer to your last question is yes, but you should know that using 'mientras' is more colloquial. In formal writing, use 'cuanto' instead.

... me siento feliz de que te conozca

Mientras menos lo sepa, mejor
Here, the subjunctive is used because of the conditional nature of the secondary clause.

I don't see why the subjunctive should be used in the last sentence (even though it is "taken" from a song).

I guess is because it's pretty much the same construction as Mientras menos sepas, mejor.

Mientras menos te recuerde...mejor/yo me hago más fuerte etc...

Right?
