"Una quinta dulce de tiempo"

Hola, I'm reading "Palermo de Buenos Aires" in Borges's Evaristo Carriego. These sentences confused me:

Una quinta dulce de tiempo en el camino a Barracas era lo acostumbrado entonces. Pero Rosas quería edificar, quería la casa hija de él, no saturada de forasteros destinos no probada por ellos.

1, What does "dulce" mean here? I can't find any reference of "quinta dulce" or "dulce de tiempo".
2, Is "quería la casa hija de él" a figurative expression or something? What does it mean?
3, In "no probada por ellos", who/what do "ellos" stand for?

Pls help me, Thanks!

I would guess it means a charmingly aged mansion or a quaint old house.

He wanted a place close to his heart, and not occupied by strangers.
