Would that be "podemos establecer un día para un encuentro"?

Sí; pero suena más normal decir:

Podemos establecer un día para conocernos/reunirnos

O mejor y simple:

Podemos quedar un día.

Could you use concertar in this case? --as in ¿Podemos concertar una reunion?
