"Turn down the heat"
 
How do you say "turn down the heat" when you are cooking? In other words, to make the gas cooker burn less intensely underneath the pan on the stove?

In México, "bajar la lumbre", but "el fuego" is well understood. :D

You want to sound Mexican? Say "bájale a la lumbre" ;)

Thanks for the addition, Angelica. I don't particularly want to sound Mexican, because my dad is from Spain, so I prefer to learn the Castillian Spanish, no offense :). Although I have to say, I had a big crush on a Mexican girl from Mexico city many years ago, Patty :-). She was quite cute. But I guess it didn't work out, Mexico and Holland are almost on the other side of the globe.
