Are they all correct? What's the difference in meaning?

-I don't like email.
-I don't like emails.

-I don't like using email to communicate.
-I don't like using emails to communicate.

"Email" refers to the program in general and "emails" to the individual messages.

Angelica is correct. To add to it, if you don't like email, then you don't like the whole concept of email. If you don't like emails, it's more likely to mean that you don't like getting bombarded with them.

In your second example, I prefer to write I don't like using email to communicate over your second choice, but both are OK.
