Article & pants
 
Would you just say "vaqueros" or "los vaqueros" if you're referring to only one pair of jeans?

For example, "Ella está vistiendo (los) vasqueros."

or should I stick with using the noun "un pantalón" if I want to say a pair of jeans?

I thought jeans in Spanish was "los jeans".
You still need the article, I believe. I don't know :P

Yes, you can to say Los Vaqueros for mention the dungarees, on my country in the part north, the dungarees are named Pantalones Vaqueros.

In Spain:
You can use both, singular or plural. I usually use plural.
plural: "Ella lleva vaqueros", "ella viste unos pantalones vaqueros", "Ella se fué a comprar unos vaqueros"
singular:"ella lleva un pantalón vaquero", "ella viste un pantalón vaquero", "ella se fué a comprar un pantalón vaquero"
Jeans: It's not so common, buit you can also use jeans "ella lleva unos jeans", "ella viste unos pantalones jeans", "ella se fué a comprar unos jeans"

Yes, if you do a search for los jeans, you'll see that that usage is popular.
