Tiene Don Carlos, ay que primor,
La boina flotando al viento...

A Knight on his horse,
Don Carlos has, how elegant,
His beret blowing in the wind...

What is it? Perhaps, Oh, how fine he is!.. :thinking:

I agree that Ay is an interjection, similar to Oh in this case.
