they love your children playing to be a doctor

They do not mean the same.

This first phrase looks like there are at least two different sets of parents and is being talked about their children.

a sus hijos les encanta jugar a ser médico- your children love playing being a doctor.

This one is talking about at least two persons, parents or not, who love (watching) your (you and possibly one more set of parents)

they love your children playing to be a doctor- A ellos les encanta (ver) sus niños jugar a ser doctor.

In Spanish it is written correctly, but as Chileno said, it doesn't mean the same as the sentence in English.

Encantar is like gustar. The subject is "jugar a ser médico" and "sus hijos" are the indirect object.

well if the verb encantar is like gustar then that changes everything and i can c y its a sus hijos les encanta but that's only IF encantar is REALLY like gustar idk if anyone can corroborate these findings

OK, maybe this will help

your children love playing to be a doctor

sus hijos gozan jugando a ser doctor.

esa es otra posibilidad.

It is like gustar when it is intransitive. You can say both:

Me gusta mucho jugar or
Me encanta jugar.

Both sentences have the same meaning in such cases (and the same structure). This is not like this when "encantar" has another meaning (to bewitch) and it is a transitive verb (that means that an DO is needed):

La bruja encantó a la princesa.

Children like playing.

A los niños les encanta jugar.
Children love playing.

Sólo mejor o "mucho mejor" ;)

Aquí se suele decir

a los niños les encanta jugar a médicos. :)
