I found in a grammar book that nationality names like Spanish etc.. and the old etc... are nouns which are singular and plural can anybody set an exemple.

What are the old etc.?

Do you mean:

The Spanish are nice people (plural noun)
Spanish is an interesting language (sg.) :thinking:

No,
You would use: one Spaniard/two Spaniards
or one Spanish person/ two Spanish people

You can use "fish" that way, however. One fish, two fish, red fish, blue fish.
