I was in Croatia a couple of years ago, and if I remember right I stayed around Poreč. I liked it a lot, and especially the historical parts of the cities in Croatia are wonderful. The beaches disappointed me a lot though. Most beaches throughout Croatia are not beaches with sand, but rather beaches of stones, or rocks, so if you are going to go swim from the beach, I advise you to get some kind of beach shoes, which fortunately are pretty cheap, and you will be able to buy them anywhere in Croatia.
I looked forward to do some snorkling from the beach as well, but there is literally nothing to see at most beaches. The only things I was able to spot were some few sea cucumbers (Holothuroidea) and some sea urchins. You can find some good spots though, and especially if you visit one of the many lagoons, you can find some more to look at.
You must try a boat trip. Many of such trips are quite cheap, and some of them will sail around to different islands, and food is often included in the price. At one of the trips I was at, we visited several islands, and they served herring, which they catched while we were sailing and then prepared it.
When it comes to food, try staying away from the pizzas, they are rather dull, but you should definitely try some ice deserts, as they are brilliant. And of course, national and traditional dishes are always good.
