I think in this context, the correct translation would be "stuck up" or "full of herself".
Mejor no intentes salir con esa chica, apunta bastante alto. Don't try to go out with that girl, she's too stuck up. In slightly different contexts, "apuntar alto" can also mean "to set your sights high", "to have high expectations", "to aim for the stars" etc.
