Your sentence in English is right, but "cayendo" is not an adjective: "I still remember the rain
as it was falling over the closed windows as we talked about her."

Depending on the verbal tense:
El policía que ríe/reía.
El niño que llora/lloraba.
Some verbs admit a suffix "-ente" which can be sometimes translated by English gerund, but it's not universal:
La bella durmiente = The sleeping beauty
El agua corriente = The running water
Mi amante esposo = My loving husband
In general, that kind of adjectives have to be expressed with "que (hace)":
El profesor que habla = The speaking teacher
La secretaria que escribe = The writing secretary
Los niños que gritan = The screaming children
