In the sentence "We care about you and your health..."

I am thinking of using Nos ocupamos de usted y de su salud, but maybe it would be better to say Usted y su salud nos interesan??

I would say : nos importa su salud
but there is not just one way of saying this.

For me the standard translation would be "preocupamos":
"Nos preocupamos por usted y su salud." (you can use too: tí, tu, etc, and the ones you have said)
