I always thought estar crudo was used to talk about food. It means something is raw.

Those are funny words!
I've always heard.... crudo = hangover but I think it uses the same connotation as "raw". When you drink too much alcohol, your stomach becomes "raw" so I think that's where the word "crudo" came from.
