your phrases are ok, but a bit fuzzy. You have a good level, so I try to show you other usages, to achieve a better estructure/style (like using metaphors )
A literal correction of your's were

Estoy de acuerdo contigo, Poli. Pero, cuidado, la metáfora (en femenino) es uno de los procedimientos más complejos de la lengua, en el que es muy difícil ser creativo. Muchas metáforas pasan a la lengua, se lexicalizan y nos olvidamos de que son metáforas (dar aliento, que has utilizado, es una de ellas). Éstas son utilizadas por cualquier aprendiz de una lengua sin necesidad de estar versado en ella. Si te refieres a esto, por supuesto, hay que utilizarlas como el resto del vocabulario.

Fué un examen fácil, para mi. Aunque no debería decirlo.

Mis esfuerzos had dado fruto........mi nivel es Superior.

Tengo muy buen oído para el Español aunque mi entendimiento de reglas gramaticales es pobre. Pero ustedes me han ayudado bastante y continuan ayudandome con sus correciones.

Monkey see, monkey do... Thanks Poli. So, this is English!

In Spanish we say: Culo veo. culo quiero. In some South American countries you shouldn't say this, since culo is a very strong word. Here in Spain it's not such a strong word.
I guess it means the same as the English phrase.

I've never heard this phrase used before, so I don't know if it is offensive in Central America. The first word is, however, and from what I can tell, it is in Mexico, too. There, they apparently use the phrase 'Si no ves burro no se te ofrece viaje' instead. I haven't heard this, either.

When you wrote your version of monkey see, monkey do I thought you did it like that on purpose because of the Spanish equivalent. But you were not kidding, it was just an honest mistake?...That's so cute!
