When I searched Brain in my dictionary it said I could use el cerebro (regular noun) or el seso ( for food). If this is true, can I say, " Me gusta comer el seso humano."? Also, if I were to tell someone that I would like to eat their brain, would I still use el seso?

"seso" is mostly used in the plural when talking about food: "sesos".

To answer your question, the "normal" (not so normal to me) sentence would be "Me gusta comer sesos humanos" (yucky, yucky)

Some people like to eat "sesos de animales" (more yucky yucky)

The words "seso" and "sesos" are used in some colloquial expressions:

*Devanarse los sesos = to rack one's brains

*tener poco seso = to be brainless - to have very little sense

*Sorberle el seso a alguien = to dominate someone - to startle someone

*Perder el seso por alguien = to be crazy about someone
