Literally, ¡por [San] Jorge!, which may work in some contexts...

But Spanish would use something like "¡por Dios!" "¡pardiez!" "¡rediez!"

I take the English exclamation is or may be a bit dated...

Any good ideas for the Spanish?

Any good derivations and data on the original meaning?

It is extremely dated. Anybody using it in normal speech today would be laughed at.

The English used to be inhibited about referring directly to god when uttering some expletive, so used to distort it. By George is a corruption of By Jove. which itself is a substitute for By god.

There are quite a few such examples of distorted reference to god in expletives, and they are called minced oaths.

Blimey! (¡caray!) = may god blind me
Gosh! (¡caramba!) = god
Crikey! (¡caramba!) = Christ
Golly! (¡caray!) = god

Edit: in this context, oath means juramento in the sense of a curse, not a promise.

oath/swear in that sense means "maldecir" (to curse/imprecate/insult)

Pensé en estos dos, (y en ¡Por Júpiter! By Jove!) cuando escribía mi pregunta... aunque no cuadran en un contexto no "gosciniano"...
