Today I had a conversation with a woman from Spain. She spoke very clearly but I just didn't understand what "Sal pitando" means.

From what I could make out from the context, it was something like "get out".

sal = leave (command) | get out (command)
pitando = (very) quickly | in a hurry

That's right.
Oxford gives,
2 pitando (Esp fam) (rápido):
me voy pitando que no quiero llegar tarde I’m going to shoot off
o
dash because I don’t want to be late (colloq);
cuando nos vieron llegar, salieron pitando when they saw us coming, they were off like a shot
o
they legged it o they made themselves scarce (colloq)

Sal 'pitando' no lo recuerdo o quizás es un modo español ibérico.
En el cono sur de las Américas, en cambio, recuerdo 'sal rajado'.

Yup, Oxford gives it as a Spain usage.
