Como se dice la agradecidos en el contexto de que los alumnos de niveles bajos son más agradecidos porque no están aún aburridos de aprender una lengua.?

Thankful is OK but in your sentence I think appreciative is a better choice.

Iba a decir "grateful", pero "appreciative" es mucho mejor en este contexto.
