I'm not sure if this is worded correctly, but this is how it was said to me in an email. I searched & couldn't find anything. I've heard of this one "No hay moros en la costa", (the coast is clear). Please help, Thanks..

"Trinchete" is defined in DRAE, as chaira. Cuchilla que usan los zapateros para cortar la suela. (I.e., a small knife)
I never heard the expression before, but it can be found on a Google search (if you search "moros con trinchetes" you get more than 5,000 hits, and the first ones have some discussions about it.)
The simplest asnwer seems (with the variation 'tranchetes') (and I quote)

Ver moros con tranchetes= Ver cosas, imaginarse situaciones, dar por cierto algo que no lo es.

I agree with JPablo's answer.

"Ver moros con tranchetes" is the common expression to say that one sees a threat where there is none.
