Addle is an old word for urine, and ovum urinum is a translation of ουριον ωον, the wind-egg from Aristophanes Clouds. Anyway, it means rotten or putrid, and is usually used for an egg which is bad. Possibly then the eggs used in a soufflé were bad, but I'm guessing here. :)
