¿Cómo se dice..?

"This lesson I need to assess you level (of english), so I was thinking if we just spend the whole hour talking, I'll get a good idea of where you're at and what you find difficult. I'll ask you some questions, try and respond in as much detail as possible. I will correct you but I'll wait until you've finished what you want to say so that you don't lose you're train of thought."

" Esta clase necesito evaluar tu nivel, así que si pasamos todo la hora hablando, tendre una buena idea de donde estas y lo que encuentras difícil. Te haré unas preguntas y intenta responder en tanto detalle como sea possible. Te corregiré pero esperaré hasta que hayas terminado diciendo lo que quieres decir para que no pierdas tus pensamientos."

"access you level"? (is it a human speaker of a plug-n-play speaker?) Wouldn't it be "assess your level" ("determinar tu nivel de inglés")?

"esperaré hasta que hayas terminado lo que quieres decir"

Also "train of thoughts" simply translates into "el hilo" in this case.

Entonce se dice "para que no pierdas el hilo."?

Yes. "No perder el hilo". You also could say "para que no te distraigas de lo que quieres decir".
