I have heard both be used in speech. "Insight" commonly refers to a collection of ideas and knowledge, and therefore can be singular even if the subject is plural. However, if the ideas and knowledge of each individual differ from one another, I think "insights" makes more sense to use, however I would say "various insights" rather than leave the word by itself to further emphasize the plurality of the insights.
