A friend of mine just went to mexico and I want to wish her well but don't even know where to begin, any suggestions?

You could try
"Qué te vaya bien" - May everything go well
"Qué te diviertas mucho" - Have lots of fun
These are pronounced like
kay tay vie-ah bee-en
kay tay dee-vee-air-tahs moo-cho
