Putting it in the middle sounds weird, but I was imagining that it could be said with a pause that way, as if you suddenly decided to clarify mid-sentence! :)

I suggest:
I love seeing Rosa happy.
or
I love it when Rosa is happy.
To me this conveys it better than the verb "watch."
