Uno momento - food and foods are not the same. Foods are certain groups of food. Food is a general term. I'm going away to think about this, but they are not interchangeable.

latter one could substitute 'certain foods', it seems to me.

Yes. Both food and foods are correct, and I'm trying to work out if there is a difference. I think not, really.

"Food" es complicado. Puede funcionar como sustantivo contable o no contable (mass noun). Personalmente prefiero "One of the main reasons that preservatives are used in certain foods", pero "... certain food" también está bien. "A food" me suena un poco extraño, pero se ve de vez en cuando.

Estoy curioso, ¿por qué has escrito "one of the main reasons because"? ¿En español escribirías "una de las principales razones porque"? Lo pregunto porque yo lo escribiría "una de las principales razones por las que".

No, en español escribiría o "una de las principales razones por que" o "una de las principales razones por las que", pero nunca escribiría "una de las principales razones por qué"

No sé sabe por qué se usan aditivos en los alimentos. Aquí usaría why.
No se saben las razones por las que / por que se usan aditivos. Aquí creo que sería más lógico usar because, porque no preguntas, sino afirmas.

Hay dos más:

No se sabe el porqué del uso de aditivos (no se sabe el motivo)
Usan aditivos porque quieren. Aquí también usaría because.
