The way correct to say that is of the following way.

Y le dijo que si.

can you just tell me what this phrase translates to in English? I beleive it is and <something> said yes. I don't know how to translate ésta. maybe and this said yes?

Literally means, And this one (female) said yes.

It should be translated to "and she said yes."
