Buena escritura can sometimes mean good handwriting just as good writing may sometimes mean good handwriting in English.

Un buen escrito is good writing as in how to put together a good sentence, but I you don't see term often. Quiero escribir bien sounds better to me, but native speakers will need to confirm this.
PS: keep in mind that fantastic and fantâstico aren't exactly the same.

or "Creo que escribir bien"

It all depends on what you want to say.

If you want to be a good Spanish writer as in someone who can be hired as a writer: Quiero ser un buen escritor.

If you want to learn who to write well as in putting the comma in the right place you can say: Quiero saber escribir bien en español.

Just as in English, there are so many ways of saying things. Often the meanings vary a little too.
