You're dealing with two different verbs:
acercar = to bring nearer/closer
acercarse = to get nearer/closer

Your story used the latter. Since this is a reflexive verb, the -nos ending means the subject is nosotros - (nosostros) nos acercamos (we got/came closer) - but that isn't what you wanted to say. You wanted to say that the dog (ella) got nearer - (ella) se acercó (she got/came closer).

The structure you chose to use in your sentence requires an infinitive, so it's perfectly fine to use acercarse. I chose a synonym, only to avoid repetition. I think Crotalito meant to write acercarse, but skipped a few letters.

Now, using acercarse, the idea that the dog is getting nearer is conveyed, but the sentence doesn't make it clear to whom or to what. To denote that, a prepositional phrase is needed. Both Crotalito and I chose a nosotros. That also works with the synonym I used.

A fin de que means so that. Crotalito left your version alone (which is fine). Antes de que means before. Both require the subjunctive mood, so both Crotalito and I corrected the verb to pudieramos. My version gives the sentence a slightly different feel, as you can see below.

Tardó unos treinta minutos en acercarse a nosotros a fin de que pudieramos acariciarla.
= It took some thirty minutes getting closer to us so that we could pet it.

Tardó unos treinta minutos en venir a nosotros antes de que pudieramos acariciarla.
= It took some thirty minutes getting closer to us before we could pet it.
