Catalán translates to Castillian fairly easily to me (much easier than Portuguese or Italian). I imagine that xano relates to the word sano.
I'm sorry you don't have the opportunity to use Catalan in California.

L'etimologia és molt curiosa: [s. XX; de l'it. dial. ciano-ciano, variant genovesa de piano-piano 'pla; calmós', reduplicat]

Well, I think you are right... "Piano, piano, si va lontano"... was the motto of the Italian Marco Polo, he went to China, he got the spaghetti, and came back xino, xano...
(Don't believe a word of what I said!) (Traduttore, tradittore!)But it is similar or at least related to the French saying, "petit à petit, l'oiseaux fait son nid" (or the Spanish "poco a poco hila la vieja el copo") Or even the verses by A. Machado, "despacito y buena letra, el hacer las cosas bien importa más que el hacerlas", or the old saw, "vísteme despacio, que tengo prisa".
