Farmner Farmer?
I would say of these two definitely 'farmer'.
Personally I don't think I have ever heard 'ploughman' .
But I will leave that for the natives to elaborate on if necessary.

So the person who plows, seeds and do the harvest is the farmer? or the ploghman?
Agricultor in Spain is the person who grows vegetebles, cereals, fruit etc... and they live off it.

Any person growing a crop of any sort (veggies, grain, fruit, etc.) is called a farmer. The farmer usually plows the land, sows it, takes care of the crop while it is growing, and harvests it.
A plowman (BrE: ploughman) would be a person who plows land for others (to make his living).

Agriculture is the business of cultivating soil/land, the growing of crops, and the raising of livestock or poultry. The person who does these things can be called an agriculturalist, but that word isn't commonly used.
We tend to use simpler words:

farmer
crop farmer
cattle farmer
chicken/turkey farmer (poultry farmer)

cowboy
cattle rancher
livestock rancher
livestock handler
