I think that bride is used when the woman is going to get married. I think this saying is used above all for girl friend or fiancée.

Aha ok so it' s basically to 'snatch someone' s girlfriend away', to steal someone else' s girlfriend (or fiancée) ?

Is this saying also used for 'novio' , i.e. to steal someone's boyfriend ?

Yes, it's used also for "novio":

La rubia ésa me ha levantado el novio

Yo tampoco nunca he sido tonta...

Aquí también hay muchisimos chistes sobre las rubias 'tontas'
(' The dumb blondes' ) es algo de general, en America también...
