A lollipop is a sweet on a stick which you suck. This image is carried over the (usually) women who control traffic helping children safely across the road, because they hold a sign which looks a bit like a lollipop. (A job for half an hour before and after school)

OK. I knew that lollipop was a "chupachup", here, but I didn't understand that "ladies".

Thanks.

What is the exactly the work of the crossing guards?

No sé si en otras regiones, pero en el centro del país se llaman paletas. Hay de dulce (o de caramelo) y de hielo (ice-cream popsicles).
